Celebrate Summer Solstice with a sunny appetizer of dandelion flower fritters. Be sure to pick them in a spot you know hasn’t been sprayed with pesticides, and avoid roadside ditches. These fritters would make a lovely breakfast too, drizzled with wildflower honey and accompanied by back bacon and homemade cranberry juice. The fritters are crunchy, sweet and floral with a hint of earthy green.
Pick flowers when they are fully open—they close up when the sun goes down and don’t open again until daylight.
